Cat nailed it on this local Fava-bean dish. The sauce (molho in Portuguese) forms the basis for a lot of local-style food from Tuna-stew to beans to meat-stew type dishes. It is based on a Peri-Peri (chilly) sauce, but the actual sauce tastes nothing like any chilly sauce I've had before. It has a very smokey flavor and the spiciness is quite mild. When reduced with local wine, chorrico, tomatoes, and smokey bacon the outcome is a very mild, smokey, and intensely flavorsome sauce. In this case cooked with local "Fava" beans which absorb the sauce and a local maize and flour flat-bread. One of the best meals we've ever had. Good work Cat... nailed it.
